A delicious, famous summer tea is made with Chinese chrysanthemum flowers which are naturally sweet and traditionally used to prevent and treat heatstroke, dizziness, headache, cloudy vision, fever, and discomforts of summer heat.⁠⁠

The small yellow flowers bloom to make a delightful brew, a gift from Nature that has great medicinal effects. Add a pinch of the dried flowers to a glass teapot and watch them bloom, enjoy the tea warm or cold to rid the body of excess heat and mind of annoying emotions. According to Chinese legend, Empress His Ling Shi in the 27th century BC was sipping tea under a mulberry tree when a cocoon fell into her cup. The Empress tried to pull the cocoon out of her tea but found that only a thin strand slowly unwound itself from the cocoon. In amazement, she had discovered the very strong fiber known as silk. From that time on, silken garments became popular throughout Asia. There are records of the cultivation of mulberry trees in China dating back 3,000 years when the ancient Chinese used the mulberry tree for raising silkworms, papermaking, food, and the leaf was brewed as tea for its medicinal qualities.⁠⁠

Mulberry leaf tea is a mildly fresh-tasting natural, caffeine-free drink that contains vitamins and minerals and is used to prevent and treat many health conditions, including cold symptoms, weight loss, blood vessel problems, and diabetes. Once indigenous to Asia, the mulberry tree is now cultivated worldwide. There are ten species of mulberry tree, the most well-known being white mulberry and black mulberry. Each year the Environmental Working Group EWG publishes its “Dirty Dozen” and “Clean Fifteen” foods lists in which the “Dirty Dozen” identifies the foods that are most grown and processed with toxic pesticides. By toxic we mean cancer-causing and neurological and genetic damage. Many of these chemicals [Round-up] are widely banned in other countries. The Lists for 2021 are:⁠

The Academy of Healing Nutrition’s program in New York and London, stresses foods from “the blue zones” where many people often live to be over 100 years old. It is a varied and rounded diet using organic, seasonal foods prepared with care to preserve nutrients and taste. Based on macro-biotic and traditional Chinese medicine principles, whole food choices will vary among individuals based on a number of factors, including energy type, seasonal changes and basic health questions.⁠⁠

Here is a lovely blended salad - incorporating both cooked and raw, cooling and warming foods - for the summery days ahead. The cucumbers and tomatoes have a cool thermal temperature, and lemon juice expels heat and dampness from the body. Cumin is a warm balance to the raw foods. A little chili powder can also be added to this recipe for a flavorful kick for those of us with colder conditions. Proportions and seasonings may be adjusted to taste.⁠⁠

Ingredients⁠⁠
• 1 Persian cucumber (or ½ standard cucumber)⁠⁠
• 1 carrot⁠⁠
• Handful of cherry tomatoes (ideally in multiple colors)⁠⁠
• Several sprigs of parsley⁠⁠
• ¼ small red or Vidalia onion, minced⁠⁠
• Handful of field greens or arugula, chopped⁠⁠
• 2 cups cooked quinoa (warm or at room temperature)⁠⁠
• ¾ cup cooked chickpeas⁠⁠
• 2 tsp ground cumin⁠⁠
• Tamari to taste⁠⁠
• Flaxseed oil (cold-pressed and unfiltered) to moisten⁠⁠
• Juice of ½ large lemon⁠⁠

Directions⁠⁠
In a large bowl, add finely chopped cucumber, carrot, tomatoes, parsley, and onion. Add quinoa, chickpeas, greens, and spices; mix together. Add tamari, flaxseed oil, and lemon.⁠⁠
